Looking for some good coral trout recipes after landing one on the weekend on a charter. They have butterflied the fish so will be cooking it whole. Any good combos to go with it and better to cook in the oven on the pan or in the weber q? And best things to put inside it.

Always thought they were a fish to be cooked simply as they are supposedly one of the best fillets out there.

Last bar-cheek trout I cooked tasted a bit bland.

I would think any recipe would work. I'd go the pan - just butter, salt and pepper.

Grill or fast fry so its not too soft - i personally hate soft mushy baked fish.
You can bake em in the oven (uncovered) but turn to grill for a few minutes to toast em tight at the end.

Skin makes awesome crackle with some salt & pepper rubbed in but don’t make the oil too hot as scales will pop out all over the place and stick in yer teeth on the chew.

BBQ (toast) the wings and eat with a small fork all to yourself

Can be done in the Webber no worries (roasts very quickly uncovered) but practice makes perfect.
