it's mango season, so time to steal some fruit of your neighbors trees!
anyway - rub some cajan spice on your fillets and shallow fry - then our this stuff on top.
Ingredients
* 5 large ripe mangos peeled and cut into 1/2-cm dice
* 2 medium Red Onions cut into 1/2-cm dice
* 2 stemmed and minced red jalapeno chilli's
* 1 tablespoon peeled and minced fresh Ginger
* 2 tablespoons hot pepper sauce or sambal (sold in a jar)
* 1/3 cup fresh Lime juice
* sea salt
* Ground black Pepper
Method
* In a large, non-reactive bowl, combine the mangos, onions, jalapeños, ginger, sambal, and lime juice, and blend gently.
* Season with salt and pepper.
