This one. Hand made in germany. My dad got it from the factory. Cleaned 20 odd geese still razor sharp without sharpening.

But I went one better and bought a Tojiro, its folded steel like a samurai sword. best knife I have ever used.

For someone whos not great with a stone or steel,Victorinox sharpen easy but don't hold an edge if not worked on but Swibo are harder to sharpen but once sharpened will hold an edge longer but yea we always used Dexter russells slaughtering,can you get em in stainless?

Minute you got to stainless steel you have the harder to sharpen issue. ie Swibo
Dexter russells are high carbon content so easy to sharpen.

Good tip on sharpening your knives is to use the steel first to straighten the blade before using the stone, that way the blade is not damaged, finish with a few strokes of the steel.
