When I catch a nice little bream I just steam it with the head and tail fin cut off. I did this in a thermomix but im sure you can find another way. The end result is great and goes well with lemon juice. Also forgot to mention you MUST gut the fish. Steam guts are just revolting. This is more of a suggestion than a recipe.
