KK's Lemon Pepper Beer Batter

KK's Lemon Pepper Beer Batter
well i thought I would put up one of my favourites for eating fish...this is particulalry good for saltwater barra, but I used some spanish flag fillets for this meal.
Ingredients
SR Flour
Lemon Pepper
Beer
1 egg
Method
Beat 1 egg, then add some flour, and beer whilst mixing...keep adding beer (feel free to 'try' the beer to make sure it is OK) and flour together until you reach the right consitency and amount you are after. Usually you will need a stubbie of beer to make enough batter for fish to feed 5-6.
I then add in a liberal amount of lemon pepper and leave to sit for 15-20 mins.
I prefer to use Self Raising Flour as it seems to create a lighter batter, wheras plain flour is a bit heavier.
lightly dust the fillets in flour before dunking into batter, then straight into some very hot oil. serve with tartare...

did a litle number on some dhu (being pol correct dunno how it is spelled up here yet) the other night with some big ass bread crumbs (bit like crumpled toast) fe d the boys at work next day too

Yep you were right KK, trickies must be really suited to deep frying cos they were amazing..
Used the tip on the SR flour but didnt have any lemon pepper so put a drop of vanilla essence in the beer batter, "tried" a few beers while cooking, awesome

I used this batter recipe tonight on sme golden snapper (did an arafura fishing charter today) and it was tops. I did make the batter a bit thick tho. Next time will make it a bit thinner. Even the misses like if and she don't like fish unless it comes in newspaper.

My kids would live on beer battered fish if we let them. I make it often and found that I always have some batter mix left over. so have started making beer battered chips with the left over bit. we just cut up a couple of spuds into wedges. then nuke them until they start to get soft. dust with flower, dunk in batter, deep fry and enjoy........it's nearly as good as the fish!
