Mackerel Fajitas

When you catch a decent Mack there is a lot of fish to eat, and if you like catching them you will need new ways to cook em.

One I came up with which is real popular with family and mates is Mackerel Fajitas (pro. Fahita')s.

You will need for mackerel steaks, Old El Paso Fajita seasoning, Tortillas, Salsa, Lettuce, Avos, Jalepenos, sour cream, cheese...... You get the drift Mex stuff!!

Get your mack steaks and chuck em in a bag with the Fajita season shake and leave for a bit 10 20 mins or so. BBQ them till just cooked then flake them up with a fork.

By this stage you should have laid out all your other ingredients ready for people to assemble thier Fajitas. Once ready if you have a flat sandwhich grill/press, wack them in there to toast up. I have done them on the BBQ as well but its much easier with sanga Grill.

Don't put too much in each Fajita or you will make a mess of yourself!!
