Agree with the advice to use an fast and erratic retrieve.
And I'll pitch in and say that I like queenfish when caught, bled, and iced quickly, then cooked up the same day.
Great when you have a big group coming round. I cube it, then crumb it into fish bites, and serve with dipping sauce in the middle of the table. Always goes down well.
