Beer batter

Just cooked up a feed of beer battered flat head. So glad i brought a few kg back up. I used tooheys extra dry. Just wondering what everyone else uses. Vb is also good.

Light ice..straight out of the freezer, sit the bowl of batter in a bowl of ice.. the colder it is the crispier the finish. :mrgreen:

whatever you do to make your beer batter .. try 40 to 50 % white vinegar replacement of your chosen liquids

Yes the vinegar is a winner ,, Not sure about the 40 to 50% .
But I do use a big dash and also the zest of a large lemon .

Coopers pale ale works best I reckon, even has it in some of the recipe books
Due to the filtration process and more yeast

Definitely cooler makes for a good crisp
If there is water and it holds fish, then it is fun trying to fool them into eating what you offer!!

Especially when you can see them!

Recently made a batter for chicken nuggets out of beer and Masterfoods All Purpose Seasoning with a dash of chili powder, cooked in hot rice oil, came out really well, almost as good as McDonalds the kids said :D

Knocked up some beer battered Jewie tonight. Through in a bit of vinegar, didn't really notice it though, as I went easy on it as I was worried the kids might winge. :roll:

the fastest batter ... if your going to have it with a sauce ..sweet and sour etc ..is fish dipped in beaten egg then floured with wheaten cornflour..(maize cornflour doesnt work as well )... then shallow or deep fried ... drink the beer :)
