The boffins are saying that ultra hot frying is not the way to go, as it creates acrylamide, which is carcinogenic.
It is the carbs that turn bad when the temperature goes past a certain point.
I believe chip makers in the USA have been told to turn down their frying temperatures.
The FFF hot rice oil exponents might want to change their ways ...

Re: Frying in ultra hot oil
if you avoided everything that causes cancer you would die of worry.
different oils do different jobs some do better jobs than others ..some cooking oils that are used to wipe camp ovens go pretty rancid. if you use coconut oil , applied with a cloth to wipe your camp ovens stay rust free and in good condition.
that rice bran oil is good to cook with even better when its on special at the super markets

Solution for a long life is simple enough ... always stand up, cook your food in warm skim milk, don't smoke, and don't drive in Asia.
