What knife do you use?

What knife do you use?

As the title says what brand/type of knife do you use for breasting etc your geese when you kill them? lost my knife and just wondering what everyone uses

Doug uses the edge of an A4 sheet of paper he's that good. Nothin like a clean paper cut!

Martini is my knife of choice or victorinox. Both are razors when you buy them.

Don't know about cutting geese, but for fish.... its Frost, then Zest, then all the rest and only then swibo, its true some are easier than others to keep sharp. Also they do wear out I have got about 4 years from the first frost I got, its now a great whiting knife.

Depends on how good at sharpening you are.
I use an F Dick and it would do in excess of 1000 fish a year. It is a hard knife to sharpen but damn it is good and holds an edge well. Victorinox are easy to sharpen and seem to go alright. Swibo makes an ok bait knife.
I guess if you are only doing a few geese then the Victorinox would be the go

Filleting fish and geese big difference
Specially when you knock them of as quick as me ;) ;)
Use a smaller type curved blade Mippa easier for doing in and around the chest bone and wings
I grew up using an old timer knife now I use a short thick deer skinning knife only about 4 inch blade .

The son bought me this Camillus for fathers day back in 95 and I have used it extensively for dressing and skinning animals since then
It has done a lot of work and still has a lot left in it
