I cooked a fair bit of barra last week and used beer batter instead of the usual crumbs.
The recipe was COLD beer plus self-raising flour, plus salt. Thick mix with lumps. Ultra hot oil.
I had a couple of old beer stubbies that people had left here and tried a different beer each time and noticed there is a difference in the batter. VB sucked, although admittedly the bottle had been sitting in my laundry for a year.

Use Middies aswell make sure it is icy cold (even chuck a few ice blocks in ) or wack in the freezer until ready to go and cook it twice

Coopers Sparkling, SR flour and a pinch of bi carb makes it nice and crispy. Put the batter in the fridge and get it nice and cold - about 3 or 4 Coopers time wise does the trick Hot, clean oil................. MMMMMM

I tried with XXXX Gold, VB and Cascade using just flour, beer and pinch of salt. The XXXX Gold was best, the VB was yuk and the Cascade was OK.
Will try experimenting with batters and do an NTMAG article. Beer batter is a lot easier than crumbs, although I still reckon good crumbed fish tastes better.

3/4 cup of selfraising and 3/4 cup of plain flour and 1 egg. 1 full stubby of mid . Salt and pepper with clean vegetable oil. Can also add a teaspoon of curry powder to the mix but I don't rate it too much.

Coopers Sparkling all the way! ice cold and 2 tables spoons of olive oil in your batter mix will help it crisp right up.

I once saw Jamie oliver say that you should add ice to all beer batters, cant remember why but looks like some of the guys on here are all over it........... mmmmm ice, ice baby dum dum dum da da dum dum

Used Coopers pale ale last night on some fresh harbour caught baz- worked a treat. Do prefer Coppers Sparkling, you just can't beat the flavour it creates.
Using ice in the batter keeps the carbonation in longer, creating a crispier lighter batter. The trick is also not to stir the mix too much as to keep the "fizz" in.
