I usually use a TED's and you want it so cold that it nearly freezes coming out, the secret to a good beer batter isn't the beer though. You need to use very little flour in the batter mix to make it nice and light, and lightly dust it with flour salt and pepper before it goes in the light batter. Add an egg yolk if you want color. I like my barra crumbed and only deep fry big old stink fish like jewies and 30lb barras :lol:

bwahahaha, good advice Brent.

Your method is surely best but the thick sludge batters I made last week were OK. I think the hot oil did the trick.

We battered some freshly cut pineapple rings which worked well, and made sweet potato fries.

It's a batter frenzy, battered bait is next, maybe sards :-)

I am a Queenslander/Croweater/Territorian mongrel mix, so I'll drink anything, even Southwark Bitter :rofl:

But when you suck on a XXXX Gold you know it's going back into Territory fishing, as they sponsor almost every comp up here, and this forum too. So get a box of Golds and start :drinking5:
