I read somewhere that around 40 seconds after take off they switch to auto pilot and switch off a couple of minutes before landing

Even with autopilot you don't want them both sleeping.
Difficulties getting out of the auto mode were responsible for two of the early Airbus crashes on landing, lack of proper training if I recall correctly. The silly things that cause disasters.
Nothing beats the Siberian crash though, captain's kid in the pilot seat ...
