Hi Nofo, regarding your EPIRB, if you are using it purely for land based hiking and not intending to use it for boating, i'd go for a personal locator beacon (PLB) instead. These tend to be smaller and lighter, but dont meet the requirements for an EPIRB (Emergency Position Indicating Radio Beacon, unless you're in Darwin Harbour, in which case it seems to mean 'Empty Petrol I Require Beer)
I use the GME MT410G (http://www.biasboating.com.au/product_p/0598x.htm), its small light and made for Australian conditions. It also sends the GPS position of where it is when activated as well as all of my personal information (vehicle registration, intended activities out bush, next of kin, medical conditions etc) to escue authorities in Canberra.
There a lot of cheap import PLB's on the net, bear in mind many of these are coded to the northern hemisphere and will cost a lot to get re-coded for registration in Australia before you can register it with AMSA.
regarding your list of things to carry, a couple of suggestions: camera - add a spare battery - nothing worse then one dead battery! waterproof bag - a sea to summit silnylon dry bag works well and is very light. leatherman - consider if you're actually going to use all the tools on it, lost of weight in a leatherman. I'd suggest a small folding knife instead. fire starter, lighter and a flint i am thinking - carry a butane lighter and a firestriker, matches are impossible to use if you're injured and dont work a lot of the time, and a fire striker will work when a wet butane lighter wont. Add some cotton balls with pertoleum jelly mashed into them in a small film canister and you're going to get a fire going every time. topo map of area GPS and compass (learnt how to use a compass in JPR, just might need a refresh on it all) 2.5L Bladder and a 1 Litre Aluminium canteen durable backpack (blackwolf) pack of lures, hooks and line rod & reel in carry case - ditch the carry case, thats a lot of weight... get a small travel rod and learn how to strap it to your pack so its protected. basic first aid kit mozzie repellant/ mozzie headnet knife, pilers, braid scissors and torch on belt - go an LED torch, last forever on one set of batteries. try and make it a waterproof one a watch lightweight long clothing/ good footwear sunnies and bunnings hat headtorch - as well as a torch? I'd go one or the other - preferably the head torch as you can use it for either hand held or head mounted applications emergency thermal blanket signalling mirror - rehydration product - squincher or hydralyte - would suggest sqwincher, it has energy in it too, which hydralyte does not.

I carry a small steel mug with me, bit of weight but i can use to boil water for drinking, cook food, dig a hole, the polished underside makes a good signal mirror, i can collect water with a small sheet of plastic using a solar still, and any number of other uses. Titanium is lighter than steel but doesnt polish up.
